Pesto Breakfast Croissant
Split a fresh croissant and layer with sliced tomato and mozzarella or brie cheese. Top with a poached egg . Smear pesto on top slice and serve with a sparkling beverage. We love Ciprianni Bellini.
Don’t have a poacher? No problem! Microwave the egg!
Put 1/2 c water in cup or bowl, crack in 1 egg- cover with saucer and microwave 1 min- perfect poached egg.
Stonewall Kitchens Jam Crumb Coffee Cake
1 pkg Stonewall Kitchen Oat Crisp Topping
1/2 cup Stonewall Kitchen Jam –  we liked blueberry, but feel free to use Mom’s favorite!
For Cake
1 cup All purpose Flour
1/2 t baking powder
1/2 t baking soda
1/4 t salt
1/4 cup butter
1/2 cup sugar
1 egg
1/2 cup buttermilk
1/2 t vanilla
 Preheat oven to 400 degrees. Butter and Flour  and 8 ” round or square pan. mix dry ingrediants, cream butter and sugar, add egg and vanilla to butter sugar mix and mix well. Add dry ingred and buttermilk alternating and mix until just combined.
Spread batter in pan, top with spoonfuls of jam and swirl slightly. Top with Crumb mix, prepared  per instructions on box. Bake for about 30 mins or until done (browned lightly and a toothpick inserted in center comes out clean or with moist crumbs). Let cool and serve! Keep well overnight if you need to make it the day before. Enjoy!
